HELP! My car stalls alot. Mostly while I'm driving down the highway. sometimes when I just start to take off?

I have a 00 Camaro. It has 95k on it. It stalls almost everytime I drive it. When it stalls mostly I'm driving down a highway going 50 but it does not discriminate. It will stall once in a while say when I pull out of a parking lot or something but my car has to be running for a min. When it stalls the check gates light comes on. My oil level goes completely down but if I turn my car completely off the oil level goes back up to normal. Even after I remove Tue keys. Weird. I know there is plenty of oil in it. I don't have a leak. I get my oil changed regularly. And have had it changed multiple times since this problem has been going on. What could cause my car to stall like this? Eventually my car will start up but usually 5 to 10 mins later so it leaves me on the side of the road (or the middle with my hazards on) quite often. Help
